So tired....

This week has come and gone and I am feeling so very tired.  I knew it would come sometime.  New environment, new ways of doing things, new everything, almost! And I am tiiired. I will be resting up a bit in the next few days, but I did want to share something with you....

We picked heaps of these fruits at Joseph's mothers house last evening.  We will be making a clear jelly out of them as you cannot do too much with these guys.  They are just too acidic when eaten raw.

Anzac Day...What is it???

"Anzac Day is a national day of remembrance in Australia and New Zealand, and is commemorated by both countries on the 25th of April every year to honour the members of the Australian and New Zealand Army Corp (ANZAC) who fought at Gallipolli in Turkey during World War 1. Easter in Oz

Well, I think I would have to say that this was the best Easter I have ever had.  And I have had many a good Easter Sundays!

It was nothing fancy. Nothing big. Just Jospeh and I. When Jospeh came over, he had to find what the Easter Bunny had left him....I had made a basket of chocolates and "lollies" (hard candy, sugary candy, etc.).  Yes, he is 40. So what? Who doesn't want a basket of yummies?!

We headed out early to travel to the area north of Melbourne to go to St. Mark's for Easter Service and Father Paul did not dissapoint.  It was an amazing service to celebrate the Ressurection. The whole morning was a wonderful, simple time of prayer together and we felt very bonded. From the prayers said together in the car trip to the time of silent adoration in the church afterwards.

 We chatted with Father a bit after mass and then headed home, where I started on the Easter cake. A nice lemon curd cake that , of course, had an addition that Joseph suggested : a layer of sweetened whipped cream inside on top of the lemon curd.  That sounded about right to me, so he whipped it up and I put it in.

Can I say here that it is sooo WONDERFUL to have access to free lemons.  I ran out of lemons for the cake, and I just simply stated, " Joseph, could you pretty please go grab me some more lemons? I need a few more." And he kindly went next door, into Lorinda's back yard (a wonderful neighbor) and brought me back about five or so perfect lemons with some leaves still attached. See them on the cake? (I got a little artistic near the end with all of those lemons available :o).

So the cake was done.

 Joseph threw in the roast and did his spectacular roasted veggie creation. A little over an hour later, we feasted.

                                                                                            ...And it was really, really good.

This is only the second time in my life to have roasted lamb, and I think I can easily say it is my choice of meat if given one. At least the way Joseph makes it.  He really does well in the kitchen. I am so happy for that! I have never roasted broccoli among my roasted veggies, yet I would suggest to all of you, if you have not tried it, do so.  It is completely different in taste and texture.

Then we just relaxed and did a triple, yes TRIPLE, movie feature at home.

 Then off to snoozey land, giving thanks to God for such a simple, joyous day with no worries in my head that usually accompany everyday life... you know...the eternal "to do" list we create in our heads each day.

Anyhow, monday has begun, I am sipping my tea with honey and milk, listening to very loud and rambunctious birds outside (they are REALLY loud here!), and getting ready for a new day of "to do's". The list will not be as long as usual, since it is still a celebratory time here for Easter.  Back in the day, we used to do that in America, too....a four day weekend for Easter. Did you know that? My dad said so. Anyhow, I am glad it is still here in Australia. Not everyone celebrates it (sadly), but many have the time off of work and school because it exists.

A new adventure begins...

So I fell in love with an Aussie.

 Then I moved permanently to Australia from Indiana on March 10th, 2011.

And now here I am, sitting on a couch in Lara, Victoria, Australia finalizing the decision to start recording my new life down under. With all of the adventures, joys, frustrations, mishaps, revelations and insights that come my way. 

This is for all of you who wish to know what it is like to give up all the middle class comforts I had in cozy, midwestern USA (Indiana) for 39 years and give in to the calling to begin life here in Australia with my fiance and soon to be spouse (in August!).

Hopefully, I can educate dear family and friends (and others who wish to tag along- all are welcome!) on the things that go one here in everyday, Australian life that we Americans just have no clue about!!! Let's admit it, we don't know all of the states in Australia or even how many there are (7!), who the heck runs the country here,  what Footy is or what a "slice" is (yum...)...or...

What's yummy for brekkie (breakfast) here? (see? learning new slang already!) I'LL BE SHARING RECIPES AND PHOTOS REGULARLY!

What is pouncing on the darn roof at night and scaring the bejeebers out of me! WAIT TILL YOU SEE!

What do I miss the most-est about the good, old Indiana? I WILL LET YOU KNOW, DEAR FRIENDS, IN HOPES IT WILL BE SENT TO ME!!! MAYBE I'LL SEND YA SOMETHING BACK!

What am I learning for health and physical wellness while practicing and studying herbology....I'LL SHARE AS MUCH AS I HAVE TIME FOR!!! IT WILL CHANGE YOUR LIFE!

Spiritual insights along the way? OF COUUUURSE!!!! IF GOD SHARES WITH ME, I'LL PASS IT ALONG!

Until the next blog, I will enjoy my Easter weekend and wish you all a Blessed and Joyous Easter weekend.  This is a 5 day weekend in Australia this year- Good Friday, Holy Saturday, Easter Sunday, Easter Monday (it's also Anzac Day which in turn makes tuesday a public holiday, too ). Crikey! Try to get that back home! I will fill you in on Anzac day this coming tuesday...
